The minecraft server is the official minecraft server of Mojang - thus their privacy policy applies (https://privacy.microsoft.com/en-us/privacystatement)
However you should not be able to connect to the server as you will not be whitelisted - if you are capable of doing so, please disconnect immeadetly and tell me via webmaster@grunzehund.de
If you try to connect, you get an error, but your attempt will be logged. The logs are kept for no longer than a week and deleted as the server shuts down (Which should be no more than ~8 hours)
The format of the log is as follows (this is an example of my own account trying to connect whilst not whitelisted)
